How To Make Lamb Kebabs Greek Style (Souvlaki)
Feeling carnivorous this weekend? Looking for a reason to fire up the grill to try something different and interesting? Then try a traditional Greek Souvlaki Kebab. Some great vegetables to have along your kebab to keep it colorful and interesting, would be a white Vadalia onion, some red or green peppers, tomatoes, and either some Hummus or Tzatziki sauce for spreading on your grilled pita to go along with your kebab. Garnishes can also be lemon wedges, olive oil, and additional red or Vadalia onion.
Other great side dishes are roasted Greek potatoes, a rice pilaf or some sauteed spinach or traditional Horta greens in olive oil, garlic and lemon juice. Lamb Kebabs on the Grill (Souvlaki)
Ingredients
Two pounds Lamb Leg or Shoulder
1/8 cup olive oil
5 cloves garlic minced
Juice of two large lemons
One Tablespoon fresh Oregano
One Tablespoon fresh Thyme
One Tablespoon fresh Basil or Mint (do not use both)
Two teaspoons sweet Paprika
One teaspoon ground Cardamom
One teaspoon cracked black, green or pink pepper
One teaspoon Kosher salt
Ten metal skewers for grilling
Ten flat bread style, or pocket style pita breads
Tomatoes, lemons, and onions as garnish
Tzatziki and Hummus as condiments
Method
1) Cut the lamb into one inch squares and set to the side.
2) To prepare the marinade in a bowl place all of these ingredients: olive oil, garlic, lemon juice, fresh herbs, ground spices except for the salt. Place the meat in and toss to coat thoroughly. Cover the bowl tightly and marinate in the refridgerator for up to four hours, or as little as 20 minutes.
3) Create the skewers alternating between the onion, meat, peppers, meat, onion etc. You will need about ten skewers.
4) Sprinkle with the salt. Sear about 30 seconds a side on high heat, then remove to medium low heat for roughly 12 to 15 minutes until the internal temperature reaches 160 degrees Fahrenheit for well done. For medium rare cook for roughly 8 to 10 minutes until internal temperature is 145 degrees Fahrenheit.
