Mediterranean Rice Pudding World Cuisine Today Magazine
Have you ever wondered how to make a refreshing and delicious rice pudding? If you do not like exceptionally sweet desserts, but do enjoy an occasional lightly sweet creamy treat after a special meal try a refreshing Rice Pudding! Excellent also in the morning with a cup of coffee.

Mediterranean Style Rice Pudding
Ingredients
Three quarters of a cup rice
One and a half cups water
Two cups two percent milk
Two cups cream
1/2 cup sugar
1/2 t vanilla extract
1/2 teaspoon sweet cinnamon
More for Dusting
Whipped Cream if Desired for Garnish or Fresh Berries
Method
1) In a large saucepan place the water, rice and salt. Bring to a boil and reduce then to a simmer at medium heat.
2) In a small bowl mix the milk, cream and dusting of cinnamon. Whisk. Gradually pour in from a height and continue stirring for thirty to forty minutes until the consistency looks like porridge. Do not over cook and be sure to stir throughout the process so that the rice becomes a porridge.
3) Pour the rice pudding into some pretty custard cups or small bowls. Cover tightly with plastic wrap and let cool so that pudding will solidify. Let come to room temp before covering.
4) Once chilled dust with the cinnamon and garnish with whipped cream and/or berries. (You may use all milk if watching fat in the dessert).
