Ingredients
Two pounds large frozen or fresh cleaned Jumbo Shrimp
Two cups fresh Tomato Puree
One cup dried Red Chili Pepper of choice or Red Chili Flakes
One cup Vegetable Broth or Chicken Broth
Three large Garlic Cloves lightly crushed and pealed
1/4 cup Vegetable Oil
Three Tablespoons unsalted Butter
One Tablespoon Sweet Paprika
One Tablespoon Kosher Salt
1/4 Teaspoon White Pepper
Mexican or Greek style Oregano dried to taste
Method
1) In a large non stick fry pan or pot place your Oil, Butter, Whole Garlic Cloves and Minced Onion. Saute for one minute and remove the Garlic Cloves to the side.
2) In a non reactive pot mix the ground dried chillies and their seeds with the pureed tomato sauce and broth. Mince the sauteed garlic cloves and add to the pot. Bring to a boil and reduce to a simmer stirring occationally semi covered for 15 minutes.
3) Add the Jumbo Shrimp to the pan and saute for six minutes sprinkled with the remaining dried spices. Pour the Tomato Pepper sauce over the Shrimp and simmer an additional 15 minutes.
Serve with Rice and Refried Beans a Fresh Salad, Slice Avocado and Flour or Corn Tortillas and Sour Cream
